Ayam Masak Merah
(Spicy Tomato Chicken)

We usually have Ayam Masak Merah as one of many many dishes during our festivity - Hari Raya Puasa (Aidil Fitri) and Hari Raya Haji (Aidil Ad'ha). Easy to cook and not too time consuming.


1 medium chicken - cut

7 garlic

2 large onions

1 half thumb size ginger

1 three quarter thumb size fresh tumeric

1 three quarter thumb size galangal

2 pcs of lemongrass

6 pcs fresh tomatoes (you can opt to use about 3 tablespoons of tomato puree)

5 pcs birds eye chilli (red)

5 tablespoon chilli paste

3 pcs candlenuts

Salt, tumeric powder, sugar according to your tastebuds.

Some oil.


  1. Mix tumeric powder and a little salt to the cut chicken. Fry lightly - just so that the skin is about to turn brown. Strain and put aside.
  2. Cut the 2 pcs of lemongrass into 2 (4 pcs altogether) and put aside.
  3. Except sugar, salt, lemongrass and chicken :), grind the rest of the other ingredients into a fine paste.
  4. Heat oil, once heated, pour the grounded paste and lemongrass, fry this almost dry. Put in the chicken, sugar and salt. Let the mix cook for another 5-7 minutes and you're done.
